Mirin-fu, mirin style seasoning, was invented in modern times when the rice traditionally used to make mirin was in short supply and alcohol taxes were high. These days sweet cooking seasoning mirin style is still enjoyed for it’s low price and lower alcohol content.
Mirin style seasoning can be used in the same way as mirin in many Japanese dishes and sauces.
• Combine the seasoning with soy sauce to make teriyaki sauce.
• Use as an alternative to sugar in savoury recipes.
• Add to fish dishes to lessen the strong seafood aroma.
